So as I stated this site is for Cooking for two or more. With that in mind, and if you are like me and haven’t dumbed down your recipes. You are still cooking for that dinner table of five. So I wanted to share some of my “Make Leftovers Great Again” recipes which are listed below.
For instance, while shopping at my favorite produce place Malacari’s Produce & Deli in Wilkes Barre, PA. They were running a great deal on a 2.5-3 lb. boneless ham for $5.99 each. Majority of the time I am only cooking for two. My children are grown and we live states apart. Therefore, on my gentle budget and because I hate to see food wasted. I would generally end up throwing away 100’s of dollars in leftovers or try gorging myself to consume them.
Nevertheless, I baked the ham as I usually would with some of my favorite sides. You should also know that over the years I have collected almost every small kitchen appliance one can. Hence, I used my meat slicer and thinly sliced about 1 lb. of ham for sandwiches or salads. I then enlarged the slices and cut the remaining ham into ham steaks. After I used my food vacuum sealer and placed 4 steaks to a bag (giving me a total of 3 more dinner meals). Marked the bags and placed them in my box freezer.
I feel proud that nothing will get wasted, I will not gorge obsessively to avoid waste and for $5.99 I in turn, succeeded into turning one meal into 5+ meals.
