1 Each Boneless Chicken Breast,, cut 1/2-inch thick chunks
1 Each Green Bell Pepper,, cleaned, roughly chopped
1 Each Red Bell Pepper,, cleaned, roughly chopped
1 Each Yellow Onion,, peeled, halved and sliced
1/2 Package of Taco Seasoning or 2 tbsp. of Homemade Taco Seasoning Mix
2 Cups Rice, Cooked, or 2 bags of Brown Success Rice cooked per package directions
1 Cup Water
1 Clove Garlic, minced
1 Tablespoon Extra Virgin Olive Oil
1 Dash Ground Red Pepper,, if desired
Salt & Pepper to Taste
Shredded Cheddar Cheese, optional
- Heat oil in medium skillet on medium heat until hot. Add garlic and stir to flavor oil.
- Add cut chicken and sear on all sides. Then add to crockpot.
- Add peppers, onion, taco seasoning, salt, pepper,water, red pepper (optional) to crockpot.
- Mix well.
- Cook on low 6 – 8 hours.
- Serve over Rice and top with cheddar cheese, if desired
