Serves 4 – 1/2 cup servings

1 1/2 Cups Sliced Cherry Tomatoes, Washed and sliced in half
1/4 Cup Onion, peeled and diced
1 Ear Fresh Corn, precooked (roasted, grilled or boiled) removed kernels from cob
1/2 Each Avocado, pit removed, and cubed
1/2 Can Black Beans, rinsed and drained
2 Teaspoons Oil
1 Teaspoon Cilantro, Dried
3 Tablespoons Lime Juice or juice from one lime
1/4 Teaspoon Cumin Powder
Salt and Pepper, to taste
Mix all ingredients in a bowl and toss. Refrigerate at least an hour. Enjoy!
